4 eggs - hard boiled, peeled and split, remove and set aside the yolk.
2 tbls butter 2 or 3 tbls flour 1 1/2 cups milk salt and pepper to
taste.
Toasted English muffins or regular toast
Make a roux with the butter and flour, add milk and stir until smooth and has consistency of good gravy. Chop up whites of eggs, not too
fine. Add eggs to white sauce. Stir. Spoon sauce over muffin. Put yolks in a fine strainer and mash with a spoon over sauce/muffin, this
