Ingredients:
1 medium tomato, chopped
1 seedless cucumber, chopped
1/4 cup thinly sliced red onion
1/4 cup cooked red kidney beans
1/4 cup diced firm tofu
2 tablespoons minced fresh basil, parsley or mint
balsamic vinegar and oil dressing to taste
salt and pepper to taste
Directions:
1 In a large bowl combine the tomato, cucumber, onion, red kidney beans, tofu and basil, parsley or mint. Toss with balsamic vinegar and oil salad dressing to taste and season with salt and pepper to taste.
