Friday Night Veggie Soup 

Ingredients: 
1 package (16 ounces) frozen mixed vegetables
3 pounds boiled potatoes, cooled, peeled, diced
1 large onion, diced
1 whole celery heart, sliced, including the leaves
1 can (26 ounces) diced, peeled tomatoes
1 can (26 ounces) tomato sauce
3 cans (26 ounces each) water
2 envelopes (1 ounce each) onion soup mix
evaporated milk, optional

Directions: 
1 Combine frozen vegetables, potatoes, onion, celery, tomatoes, tomato sauce, water, and onion soup mix, mix well. Cover and cook over medium low heat, stirring occasionally, for 2-3 hours. 
2 Serve hot with cold evaporated milk, if desired. 
Makes 10 servings
